This Ethiopian coffee originates from the Gedeb district in the Gedeo zone, a region renowned for producing sought-after coffees. Pillar Coffee Roasters collaborates with local smallholder farmers in small lots, nurturing the coffee in a unique microclimate under native forest shade. The cherries are selectively picked at optimal maturity, hand-sorted, and processed using a meticulous washed method involving pulping, fermentation, washing, and raised-bed drying. This careful process ensures consistency and uniformity, resulting in a coffee with a distinct character.
