For this Borbon Aji lot, Edilma meticulously prepares the coffee cherries by placing them in airtight bags for 24-36 hours, followed by floating and depulping. The coffee then undergoes a dry fermentation for 36-42 hours in closed drums, completed with a light wash. Drying is carefully managed over 18 days, combining shade and sun. The result is a super juicy coffee with aromatic spices and cherry notes upfront, with a raisin and chocolate residual.
